Scrumptious Blueberry Crumb Cake

I have been having so much fun in the kitchen the past few days, something that I haven’t been able to do a lot of recently, so while I was in the mood I whipped up a delectible blueberry crumb cake that is super moist and super delicious. Plus, blueberries will be in season soon so get out there and go pick some fresh ones to make this yummy cake perfect!

Easy Blueberry Crumb Cake

Serve this delicious blueberry crumb cake warm, as a dessert with ice cream; or serve it as a coffee cake. I’ve been eating it right alongside my morning coffee for the past few days and it is oh-so-good!

  1. 4 Tbsp butter, room temp
  2. 3/4 cup granulated sugar
  3. 1 large egg
  4. 1 tsp vanilla extract
  5. 2 cups all purpose flour
  6. 2 tsp baking powder
  7. 1/2 tsp salt
  8. 1/2 cup milk
  9. 2 cups fresh blueberries
  1. 4 Tbsp butter, room temp
  2. 1/2 cup packed brown sugar
  3. 1/3 cup all purpose flour
  4. 1/2 tsp ground cinnamon
  1. Grease and flour a 9-in square baking dish. Heat oven to 375 degrees.
  2. Cream butter with granulated sugar
  3. Add egg and vanilla and beat until smooth and well blended
  4. Combine the flour, baking powder, and salt in a small bowl
  5. Add the dry mixture to the butter mixture alternately with the 1/2 cup milk, beating until smooth
  6. Gently stir in the blueberries
  7. Spread the batter in the prepared baking pan (it will be thicker than a normal cake batter)
  1. Combine ingredients and blend well to form crumbs
  2. Sprinkle topping crumbs over the batter and bake for approx 35 minutes

This recipe is super easy to make but I will admit that I think I used baking soda instead of baking powder; plus I mixed everything by hand while the baby was napping for fear I’d wake her up by turning the mixer on. It all turned out quite delicious in the end though!

Just a couple of quick notes — the batter will not ‘pour’ like a regular cake batter so be sure to spread it out evenly. Your topping should resemble fine crumbs and using a pastry blender is a great way to make quick work of the task — after it is mixed just sprinkle evenly over the cake.

When you are finished you just have a nice golden top with bubbly blueberries peeking on through. It looks so good it is hard to wait before digging in — so don’t! I dove right in and had my first piece nice and warm.
