Chili has to be one of my favorite meals. I have a recipe that I’ve used for years and years and it has stood the test of time. The only thing that could make this easy chicken chili recipe better is if I could do it faster. 

Guess what? Now that I have a Mealthy Multi-Pot pressure cooker, I can do just that! I can take the cooking time of this chili and cut it in half! I can literally cook this for 3 minutes in the pressure cooker and it is done.

This easy chicken chili recipe also works great for ground beef, and we do typically make it that way, however, the twist of adding in some chicken is a welcome change once in a while.

Easy Chicken Chili In Your Pressure Cooker

  • 1 lb chicken (breasts or tenderloins) diced into small chunks
  • 1 Tbsp avocado oil
  • 1 onion - diced
  • 18 oz diced tomatoes
  • 1 1/2 cans tomato soup
  • 1/4 cup water
  • 15 oz can kidney beans (undrained)
  • 1 large red pepper chopped
  • 1 large yellow pepper chopped
  • 1 Tbsp chili powder
  • Dash paprika
  • Optional
  • 1 tsp cayenne pepper


  1. Add avocado oil to your pressure cooker and hit the saute button. Add the diced chicken and saute until the chicken is cooked through.
  2. Add all other ingredients, stir, lock the lid of the pressure cooker in place and set the pressure to 3 minutes on the low setting.
  3. After cooking has completed allow the pressure to natural release for 10 minutes.


Be sure your pressure valve is set to seal, and I do recommend a natural release so you don't have chili spewing all over your kitchen from trying to manually release the pressure. 🙂

You can substitute 1 lb of hamburger for the chicken if you'd prefer ground beef.

I typically double everything in the recipe to make enough for our family of six and it turns out great (same cooking time).
