Holidays and family traditions go hand-in-hand around here. We’ve always had a tradition of playing board games with the family on Christmas Eve, making baked goods with the kids, and of course, eating terrific food — and lots of it! 

As our family grows and changes sometimes our traditions change a little here and there as well, but one thing that doesn’t change is the dish everyone asks for time and again, year after year. For our family, it is a couple of things, but the one I’m going to share with you today has been a keeper for quite a while.

Our Pressure Cooker Coca-Cola® Baked Beans is easy and tasty, plus it is practically set it and forget it so you can focus on making all that other food to go along with it!

p.s. These beans work great as leftovers as well. Mix with Spanish rice, top your french fries, or try your own creative way of using these — if you have any left over. 

I do have to admit, when I first started making these pressure cooker baked beans on my own, working with the dry beans intimidated me a bit, as did using the pressure cooker.

The beans are actually a breeze, simply put them in a large bowl, cover them with water, and let them soak overnight. One tip I will give you is to make sure your bowl is at least double the size your beans fill when dry — they will expand when they start to soak up all that water. 

Rest assured, my pressure cooker baked beans turned out fantastic the first time around and I’m sure yours will too. If you use a modern electric pressure cooker there is almost nothing to worry about*. You literally add everything to the pressure cooker, set the timer for 35 minutes, get on with your day, and come back to perfectly cooked beans!

Pressure Cooker Coca-Cola Baked Beans

Ingredients

  • 1/2 lb dried navy beans
  • 1/2 lb dried pinto beans
  • 1/2 lb bacon, chopped
  • 1 onion, diced
  • 2 gloves garlic, minced
  • 2 cups water
  • 1/4 cup ketchup
  • One 7.5 oz mini can Coca-Cola®
  • 1/4 cup molasses
  • 1 Tbsp salt
  • 1/2 tsp black pepper
  • 2 Tbsp dijon mustard

Instructions

  1. The night before, soak beans in large bowl filled with water. In the morning, drain off the water and rinse beans.
  2. In pressure cooker on the sauté setting, fry chopped bacon until starting to crisp then add onion and garlic. Sauté for another 3 minutes.
  3. Add in the remaining ingredients, including beans, stir and lock lid.
  4. Set to high pressure for 35 minutes.
  5. Allow beans to naturally release pressure when finished cooking.
  6. If all pressure hasn't released in 10 minutes, do a quick release for the remainder of the pressure.
  7. Serve!

Pressure Cooker Baked Beans with Coca-Cola®

This simple recipe only requires a few ingredients. Beans, ketchup, dijon mustard (omit if you don’t like it), molasses, bacon, onions, garlic, and Coke®. 

Start by cutting your bacon into chunks and dicing your onion. If you have sliced bacon, just cut the entire package into 1/2 to 1-inch strips and you’ll have nice sized pieces. You can also chop your garlic at this time, or buy some freeze-dried garlic to save time (that’s what I do). 

Toss your bacon into the pressure cooker and use the saute function to brown, then add the onion and garlic. Heat for a few more minutes, then toss all of your remaining ingredients into the pot and set the timer on high pressure for 35 minutes.

Once the cooking has completed, allow the pressure cooker to naturally release the pressure for 10-minutes, then quick-release any remaining pressure that is built up. Your pressure cooker baked beans are ready!

Now all that is left is to sit back with your family, enjoy your delicious meal, and let someone else do the dishes!
