I love breakfast. Besides being the most important meal of the day (so they say), it really does get me going and set the stage for my entire day. If I don’t have breakfast, I can be a bit of a bear. I also love breakfast foods for dinner – or any time of the day really!
A hot breakfast is by far the best option and I will take it whenever I can get it. My latest breakfast delight is a Turkey Sausage Breakfast Hash. It is so good that I could probably just eat it all day long.
This meal doesn’t take too long to prepare either, and you can choose which optional ingredients you would like to use. I love mushrooms and peppers so I used those, plus it is what I had on hand. 🙂
Turkey Sausage Breakfast Hash
First grab your ingredients. I used turkey sausage from Jennie-O, mushrooms, and peppers.
I fried up the sausage and added in the peppers and mushrooms. Once the sausage and veggies were cooked through, I removed them from the pan and added a 1/2 bag of frozen potatoes. I cooked those according to package directions.
Once cooked, I added the meat and veggie mixture back to the potatoes.
At this point, I cracked a couple of eggs over the whole mixture and just stirred them in. The eggs cook up nice and firm and are spread throughout the hash, just like I like it. You can also season with a bit of salt and pepper if you like, but I usually don’t add any extra salt to my foods.
