If you lead a busy life sometimes you just need shortcuts. One thing that is a must in my household right now is an easy way to get a quick meal on the table that is still nutritious. I have been working far too many hours; and while I’m trying to find a way to cut back working so much, right now I just don’t have the luxury of time to make many meals from scratch.

Quick fix dinner idea – chicken salad sandwich

I was super excited when Hormel sent me some of their Premium Chicken Breast to try. It is so easy to use this pre-cooked chicken to whip up a quick chicken salad for a sandwich to take on a picnic, or to have for dinner when you are working late.

Grab some pre-packaged ready to eat veggies, along with some fruit and a glass of milk, and you have a nice balanced meal. I actually made this little sandwich for myself at work (yep, it is that easy to do) and really enjoyed the convenience as well as the taste. The chicken is all real meat so there is nothing rubbery or artificial tasting here!

Chicken Salad Sandwich

A super simple chicken salad recipe that is perfect for sandwiches!

Ingredients

  • 1 can ready to eat Premium Chicken Breast (or cube your own)
  • 2-4 Tbsp Miracle Whip
  • Salt
  • Pepper

Instructions

  1. In a bowl combine the chicken breast, Miracle Whip. Add salt and pepper to taste.
  2. Start with a small amount of Miracle Whip to start and add more to taste. The more you add the creamier the salad will be so depending on your tastes you may want more or less.
  3. Scoop onto buns or a slice of bread and serve.
